Add 1 teaspoon gypsum to beer. (Just before boil)

Sugar is demerara (raw sugar) or evaporated cane sugar. This is picked up from The Baker's Catalog, or BulkFoods (http://www.bulkfoods.com/)

Dry hop *MAX* 1 week! (1 week primary; 1 week secondary; then add dry hop)

For the British Crystal, "Carastan Malt" from Great Western is preferred. We have also used Weyermann "CaraAmber" and Crisp "Caramalt" in this recipie.

Ferment @ 66F.

(Note: We usually add 3 lb malt extract vs 2)
