Water choice: Zephyrhills

Add 1 teaspoon gypsum to beer. (Just before boil)

Dry hop *MAX* 1 week! (1 week primary; 1 week secondary; then add dry hop)

For the British Crystal, "Carastan Malt" from Great Western is preferred. We have also used Weyermann "CaraAmber" and Crisp "Caramalt" in this recipie.
